There were some initial concerns with this burrito. The first half of it lacked bacon, cheese, and potatoes, it was pretty much egg and tortilla. I was resigned to the idea that this was going to be a subpar breakfast burrito eating experience. However to my delight as I continued on with the second half, cheese’s were flowing with more regularity, potatoes were popping up crisp and delicious, and nuggets of greasy bacon were coming out of the woodwork. This burrito had a tale of two halves! And while it’s ideal to have a consistently delicious breakfast burrito from beginning to end, if it’s going to start off sluggish, it’s even more important to finish strong. At least that is what my high school track coach, Mr. Connelly used to say. Comeback breakfast burrito of the year.
